5-AXIS WORK

When doing 5-axis work, is there a way to make it look at the absolute Z for a safety plane, or does it always have to be in incremental? We do a lot of tall or deep parts, and run out of Z travel on our machine. When doing 5-axis work it looks at the z at angle it is tilted. I was shown to always use incremental when doing 5-axis work, which if you want to do a couple different areas it may violate the part when going from one area to the next, because it does not look at whats between them. We have never been to school for this and not sure if there is a setting in MCX we can set or if it's a post issue or maybe a machine issue.
