To the best of my knowledge, you can't do it unless you use a little bit of help.

I recently went through a fresh install of X9 and I have the same issue. Upon searching the forum, it appears that the option to NOT have the toolpaths display set to on, by default (CNC Software actually came up with that functionality for X9, but after much backlash, removed it from later versions)  requires the use of an addon. I have it somewhere, but I'd have to search for it. It's an unsupported .exe by Roger Martin, Pete Rimkus or one of the other smart programmer guys over there.

My memory could be a little off on the history of it, but that's the gist of it. You run this .exe one time and you're set for good. PM me your email address and I'll send it to you, if you'd like. Or you can search the forum for it.

EDIT: I just found it, along with the documentation (I didn't read it though)...which leads me to believe that is, perhaps, supported.

That's probably my favorite thing about 2019, the "Only Display Selected Paths" is maintained across sessions.  No idea where it is in config but it stays and I love it.  Coming from other softwares I never understood why in the world Mastercam wanted to cause me all of the extra work of turning paths on and off.  Now, I like being able to display it if I want.
