High speed toolpaths: Optimize cut order

I have an application where I don't want to use optimize. Roughing out a large 304 forging for many many hours and I need to be able to pick up where the program left off if the tool breaks, machine quits, etc. Rest roughing will still concentrate on an area then move to the next, even with optimite cut order unchecked. I want to be able to determine a z level it stopped at and reprogram. Old surface rough pocket does consistent z level cuts over the entire part, but I can't use it for rest roughing. I can't mid program start without editing my NC code on these older machines. Thanks in advance.
