Basic questions from tutorial

I'm new to CAM, very experienced in CAD. I'm going thru this Tom Stikkelman tutorial. BTW, this dude has a voice that could soothe the devils soul.  Anyway, 1st question is I see dimensions on the 1st picture attached....I don't see anywhere where this is an option, I thought MC was no constraints and no dims?  Next when he is setting up Stock to leave, why in the world is the Z extra stock in the x direction and X stock to leave basically in the y direction? Crazy confusing.   Lastly, these pics are overhead view, and most lathes I've seen you left hand is closer to the jaws, why are the toolpaths reversed in this?   Thanks so much.

The dimensions were created off of the geometry using the drafting functions.

X is diameter in Lathe, Z is length.

I don’t see the chuck but the toolpath looks correct cutting from right to left. It is a canned roughing cycle. Remember standard CNC lathes the tools cut on the back side of the part.
