I think they are pulled from your color scheme of Windows..
you would have to change your display properties color scheme to effect them.
Someone please correct me if I am wrong.

in your menu bar, select SOLID then go down to FILLET
you have the option for FILLET or FACE-FACE FILLET.
select FILLET
Now you will notice in the toolbar you have 4 buttons that when highlighted will say..
select edge
select face
select body
select from back
you can turn them on or off depending on how you would like to select them.
I had emailed you the buttons that show which are the fillet selections.

I would lay your font out the way you like and use the engrave toolpath. Your tool would have the angle you would like to have for the v shape. Then project the toolpath onto the surface. I sent you a example and I hope this helps.

Quick question..
I was going to drill 4 points that were already drawn… I manually selected the 4 points and missed one on my selection and noticed it created a point. Is that normal? I had to actually go and delete the point it created from the drill selection.
I guess I never knew drill point selection to actually create points. I guess if I window the points I dont expect the window to stick as geometry.
if you are engraving lettering around a flange you dont need to project them on the arc to engrave them on a arc..
axis substitution would be perfect for this...

Morning Mark..
in your contour parameters... choose ramp... for your contour type..
try ramp motion by depth and put like a .5 in for your ramp depth and check make pass at final depth.
Choose the Post script files EPS,AI,PS in your "files of type" when doing a file open and it will open the PS file.
